Chinese Mango Sago Dessert: How to Make It at Home

Mango sago (芒果西米露) is one of the most popular Chinese dessert drinks — cool, creamy, studded with chewy sago pearls and fresh mango. It's quick to make, naturally beautiful, and perfect for warm weather. Here's how to make it at home.

What is Sago?

Sago pearls are small starch balls made from the pith of the sago palm. When cooked, they become translucent with a satisfying chew. They're different from tapioca pearls (used in bubble tea) — sago is smaller and more delicate.

How to Cook Sago Pearls

Bring a large pot of water to a boil. Add sago and stir to prevent sticking. Cook on medium heat for 15 minutes. Turn off the heat, cover, and let sit for another 15 minutes until the pearls are mostly translucent with a small white center. Rinse under cold water and set aside.

The Mango Base

Use ripe, sweet mangoes — Ataulfo or Alphonso varieties work best. Blend half the mango with coconut milk and a small amount of evaporated milk for a creamy base. Keep the other half cut into small cubes for texture.

Assembly

Combine the mango coconut base with cooked sago pearls. Add fresh mango cubes. Serve chilled — add ice if desired. The ratio of mango to sago to milk determines whether it's more of a drink or a dessert bowl.

  • Pomelo sago: Add pomelo flesh for a slightly bitter citrus contrast
  • Strawberry sago: Substitute strawberry for mango in summer
  • Taro sago: Use taro instead of mango for an earthier flavor
